Back to biscuits…

So Sunday, we took breakfast to our Sunday School class.  Fresh juice – see previous post  – and homemade, gluten-free strawberry biscuits.  The biscuits taste more like scones.  They taste Y-U-M-M-Y!  See recipe below…….  When you make these biscuits, please give me feedback.  I am curious what you think.  Thanks and Have Happy Day!  

RECIPE:  1 cup of Coconut Flour; 11/4 cup of Oat Flour; 1 Tbs of aluminum free baking powder; 1 Cup of Strawberries, 1/4 cup sucanant; 6 Tbs of Cold Earth Balance Butter (Soy Free); 1/2 tsp salt; 1 cup of organic (not low fat) coconut milk (I used  Native Forest, it doesn’t have BPA in the can).

Directions:  Heat oven to 425…. Mix dry ingredients well, then add wet ingredients. Mix well, coat your counter top with Oat or coconut flour, Roll biscuits out (If they start sticking to the counter, add more flour to the counter and rolling pin), Take a mason jar top or a biscuit cutter and cut them out.  Place them on a coconut greased pan and cook for 12-15 minutes.  Let cool for 5-10 minutes.  ENJOY!!
