Vegan carob chip cookies (free of gluten, grain, wheat, soy and dairy):
I am so excited! I have finally done it. I created a vegan cookie recipe (with Carob chips….tastes like chocolate). Pour Me Some Juice has been making A LOT of almond milk for all of you out there…. thanks for your orders. When making the almond milk, there’s a lot of almond pulp left over. So I have been making almond flour with the pulp. (See recipe below)
With the flour I created a cookie recipe, which is pretty yummy if I might say so myself. =) So I want to share this healthy scrumptious recipe with you.
Follow the almond milk recipe I gave from a recent blog. Take the Almond pulp and spread it out on your dehydrator sheets or on parchment paper and put it in your dehydrator or stove. Heat should not be over 118 degrees to dry out the almond pulp for flour. It takes about 3-4 hours. After it’s dried take your blender (I use a Vitamix) and blend well until it’s blended into a flour texture. And now you have Almond flour. =)
Ingredients for Cookies: Time for Prep – 5 minutes; Time to bake – 10 -12 minutes
2/3 cup – almond flour (from your pulp or bought from your local supermarket or a health food store. Here in Jackson I like to get these types of food items at Natural Affects); 1/3 cup – coconut flour (found at Whole Foods or your local health food store) ; 1/2 tsp – baking powder; 1/4 tsp – baking soda; 1/3 cup – coconut sugar (found at Whole Foods, Tropical Traditions, online or your local health food store); 1 tsp – vanilla extract; 1 ½ tsp of flax seeds soaked in 3 Tbsp of water, let soak for 30 minutes, can make ahead and put in fridge. This will make flax paste, which substitutes for an egg; 1/4 cup – coconut oil; 1/3 cup – Carob chips.
Directions: Once you have your almond flour made (or bought), place all ingredients into a mixer and mix together. Cookie dough will be a little thick and dry. If too dry, add in about 5-6 Tbsp of almond milk.
Form and pat cookies to your desired thickness.
Bake cookies at 350 degrees for about 12-13 minutes. at 350 degrees. Let cool.
